Every time I open Outlook it imports all of my emails from my main email
account. Is there any way that I can stop this? I don't want these to be
imported.

Right-click on the Contacts folder, Properties, Outlook Address Book, make
sure it is selected to include in your Outlook Address Book (which is not an
address book itself but a container with pointers to contact-type folders).
If you have other contact-type folders, do the same to add them to the OAB

If you have Contacts in the Contacts folder but they are not accessible when
you click on the To button, check these settings:
Make sure the Contact folder is enabled as an email address book. Right
click the Contacts folder, choose Properties then Outlook Address Book. Is
the box to enable as email address book is checked?

I had to reinstall Windows XP and Outlook 2003 last week and I noticed that
*.msg files show up with a generic icon instead of the envelope icon that I
had before. How can I change this file type to have the classic Outlook
envelope icon that is used for emails?

I have no idea who Mac does it - possible with imap for mail and ical for
calendar.
Your ISP either has IMAP configured wrong or you didn't set it to include
all online folders - you can tell outlook to sync only certain folders.
